Cheat Day Cheesy Potatoes | Serves 4 to 6

These cheesy potatoes are a success every time I make them. They are so soft and cheesy and the perfect side dish for any meal. I remember the first time I whipped this recipe up; I couldn’t get enough. I’ve always loved mashed potatoes, but these bad boys are definitely my favorite! I personally like to use Colby Jack cheese, but don’t be afraid to try Cheddar if you prefer. Combining the sour cream and heavy cream really elevates this recipe to the next level.

2 lb small gold potatoes, quartered

½ stick (¼ cup) butter, melted

1 (1-oz) packet ranch seasoning

½ cup heavy cream

¼ cup sour cream

1 cup Colby Jack cheese

Chopped chives, for garnish (optional)

Add the potatoes to the slow cooker.

Pour the melted butter and ranch seasoning over the potatoes. Stir until well combined.

Cook on low for about 4 hours.

Add the heavy cream, sour cream, and Colby Jack cheese, then give everything a good stir. Cook on low for another 30 minutes and serve topped with chives (if using).
