Breaking Bread

Everything Bagel Bread | 1½ Pound Loaf
Bread Machine Setting: Basic/White program
This easy, savory bubble bread has layers of melted butter and everything bagel seasoning sprinkled throughout. It bakes into a solid, sliceable loaf for serving once completely cooled.
¾ cup milk
3 tbsp butter, softened and cut into pieces
1 large egg
3 cups all-purpose flour
1 tbsp sugar
1 tsp kosher salt
2 tsp yeast

Everything Bagel Topping
1–2 tbsp everything bagel seasoning
3 tbsp butter, melted
Add the ingredients to your bread machine’s baking pan in the order listed, from milk to yeast.
Choose the Basic/White program setting based on your machine’s options. Select the coordinating setting for your loaf size on your machine and press Start.
After the last knead cycle and before the third rise, transfer the dough to a baking mat. Remove the paddle and divide the dough into 14 to 16 golf ball–sized pieces. Quickly form them into ball shapes.
Lightly nestle the dough balls back into the machine and be sure to avoid packing them too tightly. Depending on your pan shape, they will likely be in more than one layer. Sprinkle the seasoning and drizzle the melted butter over each layer as you add the dough to the pan. Drizzle the last of the butter and give a final sprinkle of the seasoning over the top of the dough. Return the pan to the machine and let it finish the last rise and bake cycle.
When the loaf is done, let the bread cool in the pan for 5 to 10 minutes before removing it. Transfer the bread to a wire rack to cool for at least 30 minutes before slicing.
Note: To make your own everything bagel seasoning, mix together 1 tablespoon of poppy seeds, 1 tablespoon of sesame seeds, 1 teaspoon of dried minced onion, 1 teaspoon of dried garlic flakes and 2 teaspoons of sea salt.
Serve instead of bagels at brunch with homemade omelets or scrambled eggs. The savory bread pairs well with mild chicken- based or light veggie and tomato-based soups; it also works well as a replacement for regular garlic bread.
